INGREDIENTS:

Red Wine Vinegar

Virgin Olive Oil

Watermelon

Cucumber

Purple Onion

Feta Cheese

Fresh mint

DIRECTIONS:

  1. Pour one-part red wine vinegar to two-parts extra virgin olive oil into mixing bowl.
  2. Wisk mixture until satisfied and put off to the side for later.
  3. Peel cucumber and cut down the middle to split in half.
  4. Chop cucumber into bite sized chunks.
  5. Chop onion to your liking.
  6. Sprinkle feta cheese on top.
  7. Pour vinaigrette to your liking.
  8. Sprinkle mint on top.
